VIRGIN OLIVE OIL
ARBEQUINA VARIETY
Production
process:
The
name of the "arbequina" olive
comes from a north-eastern Spanish
village (Arbeca) where this variety was
originally grown. Today it is extensively
cultivated all over the south of Spain,
where the special characteristics of the
climate (rain, temperature, hours of
sunlight, etc.) have favoured its
development. Production of this variety
is increasing every year and it has begun
to be one of the commoner varieties grown
in all the Andalucian regions. Over a
two-month period, beginning in October,
Crismona cultivates and produces only
this variety of olive, giving rise to a
single-variety oil which has earned
extremely high ratings from professional
tasting panels, year after year. Crismona
makes full use of all the knowledge it
has acquired in olive oil production (two
pre-selection processes of the olives
before they are taken to the factory,
meticulous cleaning of the fruit,
continuous milling, four-phase
temperature control, etc.), in order to
obtain supreme quality.

Characteristics:
Bouquet
and Flavour:
This
olive oil is very similar to the
varieties produced in other Mediterranean
coastal regions (Italy and Greece for
example). Both its taste and bouquet are
unmistakable. Arbequina olive oil leaves
no-one indifferent. It is the ideal oil
for those who love exotic flavours which
appeal to the senses. It has an almondy
flavour, slightly sweet and very
pleasant, with no trace of bitterness or
pique. Its aroma is reminiscent of wild
fruits. This richness of its bouquet and
flavour is one of the reasons why we have
chosen this oil as one of our
specialities. Its delicate qualities as
an olive oil are revealed by the fact
that it is somewhat unstable. Great care
must be taken in its storage, as the
wrong place could mean alteration of its
properties. For this reason we have used
a dark-coloured bottle (dark green) to
prevent oxidation, and to guarantee
consumer enjoyment of this really
delicious olive oil.
Colour:
Arbequina
oil does not have a particular, defined
colour, but a golden colour normally
dominates, with hints of green.
Use:
Because
of its strongly defined characteristics,
we would recommend it exclusively for
dishes where the full taste of the olive
oil is to stand out. It is ideal for
splashing onto salads as a dressing or
vinaigrette.
