Production process:
The regions making up the Baena Designation of Origin are situated in the south of the Spanish province of Córdoba at the foot of the Subbética mountains. Their olive groves grow amongst gently rolling hills and mountainous country, in the very special climatic conditions associated with this area. The combination of these factors has made the region famous for centuries for the high quality of its olive oils, which have been protected since 1988 by a Supervisory Council exclusively dedicated to improving and publicising their excellent properties. As a quality guarantee, the only olive oils bottled are those approved by a strict tasting panel formed by accredited experts. Four years ago, Crismona began to include a sample of this magnificent tradition in its selection of extra virgin olive oils.

Characteristics

Flavour and aroma
Baena has a great variety of native olive trees due to its long tradition and past. From this variety and from the climatic and natural conditions of the soil spring these unique quality and characteristics. Baena oils have an intense fruity flavour and aroma, with light bitterness and pungency.

They are light oils with such a purity that they are a reminder of the smells perceived in their fields and valleys.

Colour
In general they are oils with a fair greenish colour, though oils with an excellent golden colour are easily found among their best produce.

Use
As any virgin olive oil it is strongly recommendable for its use in dishes where it is possible to appreciate its touch of distinction. It is a special seasoning for salads, vegetables, stews, sauce, fish, as with any other dish of our healthy and highly recommendable Mediterranean diet.
