SOTOLONGO BALSAMIC VINEGAR

Sotolongo balsamic vinegar is made exclusively using wines from the D.O. Montilla-Moriles area.
The healthy wines which are selected to make vinegar undergo a biological or oxidative ageing process for at least 10 years in barrels of American oak, following the traditional system of soleras and criaderas, in the cellars company's wine cellars in Doña Mencía.
The vinegar obtained is clarified and filtered, and then undergoes different coupages with the base of Pedro Ximénez wine, a unique sweet wine obtained from the raisins of the grape of the same name, which are then left to age using the traditional solera and criadera system, from which comes an exceptional vinegar of unrepeatable characteristics.
The result is a bittersweet vinegar, rich in nuances, extraordinarily flavourful and aromatic, with notes of oak and touches of walnut, fig, raisin and date. An exceptional dressing to enhance the flavour of vegetables, pulses, fish and meat. A unique vinegar with all the characteristics of the best gourmet products.
