EXTRA
VIRGIN OLIVE OILS
Production
process:
We
want the whole world to be able to enjoy
the taste of extra virgin olive oil and
our aim here has been to select a quality
which will suit people the world over. A
good introduction to the extensive range
of extra virgin olive oil we produce and
endeavour to improve every year.

This delicious oil,
originating from the Córdoba area and
cold-pressed like all our extra virgin
oils, is one which we would recommend for
use in all types of dishes.
Characteristics:
Bouquet and
Flavour:
This olive oil has been
selected because of its incredibly smooth
taste. The combination of the typical
Córdoba olive varieties provide it with
a delicious array of aromas and flavours,
while maintaining the smoothness which
makes it appeal to customers the world
over.
Colour:
Produced from olives which have reached
their ideal stage of ripeness, this olive
oil has a greenish yellow colour.
Use:

have already mentioned, we have selected
this extra virgin olive oil as it
combines well with almost any dish -
vegetables, fish or meat. Its secret is
in its pleasant, slightly sweet taste.
Cooks all over the word use it in their
best dishes. Try it you'll see how
it gives your cooking that special touch.

0.4º
and 1º OLIVE OIL
Production
process:
Crismona is fully committed to
offering its customers the entire
range of olive oils existing on
the market today. We have
therefore included two different
grades of olive oil (obtained by
blending refined olive oil with
virgin olive oil) within our
product range. Our 0.4º olive
oil contains a lower proportion
of virgin oil, and our 1º has a
higher proportion. Both the
refined olive oil and the virgin
olive oil we use are of superior
quality. Our aim is to maintain
the same quality line as with our
extra virgin olive oils.

Characteristics:
Bouquet
and Flavour:
In general, these oils are not
known for their great sensory
qualities. This is because they
are largely made up of refined
olive oil, which has no aroma,
taste or smell. We therefore add
high quality virgin olive oil to
the blend: this provides it with
the qualities which certain of
its components are lacking. These
oils are a result of this
process, and we produce them in
two different qualities (0.4º,
which has a less intense flavour,
and 1º, which is more intense).
Both have a slightly fruity taste
and bouquet and are very
smooth-tasting.
Colour:
The colour of an oil always
depends on its composition, in
the same way as its bouquet and
flavour do. The 0.4º therefore
has a strong yellow-golden tone
with no green hints at all, while
the 1º has intense green tones.
Use:
These olive oils are ideal for
use in cooking, being
lower-quality oils than the extra
virgin variety. Their smooth,
sweet flavour and lack of a
strong aroma make them a
favourite with many cooks for
dishes where they do not want the
taste of the oil to be
over-dominating. It should be
remembered however that it is
always better to use an extra
virgin olive oil with milder
natural qualities than a blend of
refined and virgin olive oil.

POMACE
OLIVE OIL
Production
process:
Pomace oil, like olive oil, is
composed partly of refined pomace
oil and partly of virgin olive
oil. In order to enhance and
improve its qualities we have
developed a pomace olive oil with
a very high virgin olive oil
content.
This oil has an acidity level of
0.6º, which is an excellent
level compared with all our
competitors' oils.

Characteristics:
Bouquet and flavour:
A careful, precise use of virgin
olive oil in the preparation of
this oil gives it a light aroma
and its smooth taste is
reminiscent of fresh, healthy
fruit.
Colour:
Pomace oil has an emerald green
colour as a result of the virgin
olive oil used to produce it.
Use:
This oil is especially
recommendable for all kinds of
frying. Its method of preparation
provides it with special
qualities and makes it much more
suitable for this purpose than
other oils commonly used for
frying. It is definitely the best
option as regards value for money
if large amounts of frying are to
be done.
