In order to
maintain high quality throughout the
entire production process, the
temperature of the olive oil is never
allowed to exceed 30º centigrade
(ambient temperature). This process is
known as "cold manufacturing"
and ensures that both the organoleptic
qualities and the vitamins remain
practically intact. The oil is not
filtered: it is merely left to decant or
precipitate before being sent for
bottling. We want this olive oil to reach
the consumer just as we produced it in
our oil mill totally natural and
healthy.
Characteristics:
Bouquet
and Flavour:
The
main olive varieties used in making this
oil are picuda, hojiblanca and picual. As
the olives are still green when
processed, the aroma and taste of the
oils obtained from them are highly
reminiscent of the fruit itself. The
bouquet is pure and intense and the
flavour of this full-bodied oil is
piquant and assertive.
Colour:
The
particularly intense emerald green colour
is one of this oil's most attractive
features.
Use:
This
exquisite olive oil is for lovers of
genuine flavour. It should only be used
for splashing neat onto food, not for
cooking. It is especially recommendable
for salad dressings and for the
traditional Mediterranean breakfast
olive oil sprinkled onto toast.
