12-YEAR RESERVE BALSAMIC VINEGAR

Characteristics:
Mahogany-coloured with a richness of tints, this vinegar is exceptionally fruity and aromatic, with echoes of its ageing in American oak casks and a harmonious variety of fruit and nut flavours: walnuts, raisins, dates and figs. It is sweet-tasting and has a pleasant aftertaste. In short, this is an extraordinary vinegar with an unusual variety of sensations.

Production process:
Our 12-year Reserve Balsamic Vinegar is obtained from a blend of Solera Vieja La Valeriana cask-aged vinegar and solera base vinegar to which a small amount of solera fundación vinegar is added – the oldest casks containing the base vintage wine for vinegar-making - plus a larger amount of concentrated "Pedro Ximenez" must (grape juice). This process gives this vinegar its characteristic colour, sweetness and texture.

Use in cooking:
An essential for seasoning all kinds of meat, especially game, and for making sauces. It also goes will with sweet salads and pasta. For desserts, it is delicious sprinkled on strawberries, and just a few drops on any type of ice-cream provides a really original touch.
