Crismona's wine bodegas belong to the Montilla-Moriles Designation of Origin, and are situated in the south of the Spanish province of Córdoba.

The wines typical of this area are referred to as "generosos" or full-bodied. Depending on their particular attributes, they are divided into four main groups: Fino sherries, Amontillado sherries, Oloroso sherries and Pedro Ximenez raisin wines. Fruity white wines are also produced from newly ripened grapes.

The origin of Crismona's wines

In the early twentieth XX century, the company's founder Pedro Moreno Moreno bought his first 500 American oak casks in order to enhance the quality of the house's flagship wine: Fino Los Cabales.

Crismona then began to branch out into the production of different types of wine. In 1941, to celebrate the birth of his first grandson, Pedro Moreno created a "solera" or first batch of casks of Oloroso sherry. The first numbered and limited bottles of this vintage sherry were first sold in the year 2000.

PRODUCTION PROCESS

All our wines undergo an ageing process, either under film yeast (also known as the "wine flower"), as is the case with Fino sherry; oxidative ageing, as with Viejo Oloroso wines; or both, which is the case for the Amontillado variety.

Ageing is done in American oak casks, with the time taken to age a wine varying from 3 years (for Los Cabales Fino Sherry for example) to over 40 years - the case for the Viejo Oloroso type.

Our wines undergo no chemical processing. All clarification, filtering and cold treatment processes are mechanical.

QUALITY CONTROL

Quality control is constant throughout the whole process. It begins in the vineyard, where the damaged grapes are separated from healthy ones. Fermentation is carried out at a controlled temperature, and all the analytical parameters of the grape juice or must are monitored. Then, when the wine is aged, these analytical parameters are checked again, particularly those for microbial flora.

Before being filtered through a sterilising membrane and bottled, reference samples from each batch are subjected to a further quality control before leaving the wine cellars.

LOS CABALES AND DULCE CREMA


FINO LOS CABALES

Los Cabales is a pale, light fino sherry originating from the first "solera" or batch of casks established in our wine cellars almost a century ago. It is produced using a selection of our finest, most delicate vintage fino sherries.

It is a natural, very pale, smooth, dry sherry, produced and aged under "wine flower" film yeast in special Ageing Cellars using the "Soleras y Criaderas" method (the casks of wine are stored in horizontal rows, with the bottom row or solera containing the oldest wine, and when part of this is bottled, the casks are replenished from the row above).

It is ideal as an aperitif and is excellent with all types of snacks and hors d'oeuvres.

DULCE CREMA

This is a wine with real body. It is the classic, full-bodied sweet wine obtained from a combination of Oloroso and Pedro Ximénez wines.

PEDRO XIMENEZ

PEDRO XIMENEZ

Pedro Ximénez is a raisin wine, sweet and very intense, dark mahogany in colour and with a bouquet resulting from its ageing in American oak casks.

Full-flavoured, it has the characteristic aromas of the Pedro Ximénez raisin.

It is an excellent choice as a dessert wine, or to accompany your favourite sweet course.

 

 

DULCE TALITA AND MOSCATEL TALITA SELECTO

DULCE TALITA

This is a full-bodied, amber-coloured wine, with a characteristic, exquisite taste and an aroma reminiscent of muscatel grapes. Its bouquet is fresh and fruity and its flavour pleasantly sweet, giving way to a pure aftertaste and excellent sensation.

It can be enjoyed at any time of day or as a dessert wine.

MOSCATEL TALITA SELECTO

This select sweet wine is produced from Muscatel grapes and Pedro Ximénez wine. It is sweet and full-bodied with a pure aroma and flavour. Amber in colour, it comes in an attractive decorative bottle.

It can be enjoyed at any time of day, or as a dessert wine.

 

VIÑA LOS MORISCOS, LA GUASA, PATIO’S, MORILES FINO

VIÑA LOS MORISCOS

This is a year-old young wine, light, fresh and fruity. It is very pale in colour, and fermented at a controlled temperature. It is produced from newly ripened Pedro Ximénez grapes.

It is excellent for accompanying hors d'oeuvres, fish and seafood.

There are two versions of this wine: dry and semi-sweet.  

LA GUASA

Montilla-Moriles Designation of Origin wines which are not set aside for ageing are named "Ruedos". La Guasa is a wine produced from a blend of ruedo wine with fino sherries. This blend has all the characteristics of a fino, although it is less aged, and can therefore be considered a “Young Fino”.

Ideal as an aperitif or to accompany snacks and hors d'oeuvres.

PATIO’S

This is a sweet, intense wine, ruby-red in colour. Certain of its aromas are reminiscent of Port Wine.

It can be enjoyed at any time of day or as a dessert wine.

MORILES FINO

This is a Young Fino sherry, aged for only two years in American oak casks. It is pale, dry and natural. Its aroma is sharp, with notes echoing its ageing in wood.

Great as an aperitif or to accompany snacks and hors d'oeuvres.

 

MILANO ROJO Y BLANCO, MEDIUM DRY, PALE DRY Y PALE CREAM

MILANO ROJO Y BLANCO

These are aromatised wines, produced traditionally like all vermouths, the only difference being that we do not fortify them with alcohol. They can therefore be defined as a “natural vermouth” (without added alcohol).

To be enjoyed as an aperitif. 

MEDIUM DRY

This is the result of blending Fino and Raya wines. It is smooth and pleasant and is aged for a minimum of one year.

PALE DRY

Pale Dry wine has a natural degree of alcohol. It is aged in American oak casks for two years, using the "Criaderas y Soleras" system, where the wine taken from age-old casks is gradually replenished by that of a more recent vintage.

It it suitable as an aperitif.

PALE CREAM

This is a combination of Fino and Mistelle wines. It is pale, sweet and light on the pallate.

It is ideal at any time of day.

 

RAMIRO, LA VEGA AND LA GUASA
